Types of Note Taking Apps
I have looked at a lot of apps for note taking on the iPad and in doing so I noticed that they tend to fall into two major groups: those that are geared towards keyboard usage and those that are geared towards free drawing/sketching notes. While the drawing/sketching notes applications tend to have the more appealing and sophisticated interfaces, I personally find applications that handle input through the virtual keyboard to be more productive. Of course, there are any number of situations in which having the ability to include sketches into your notes can be incredible useful, but most applications that handle the notes as text have at least some basic provision for allowing the user to do some sketching as well.
